Quick Chicken & Vegetable Stir-Fry

A stir-fry is the ultimate fast dinner, but it rewards a little preparation: once the pan is hot, everything moves quickly, so the time to chop is before you start cooking, not during. Have your chicken, vegetables and sauce ready, and dinner is on the table in minutes.

The goal is tender chicken and crisp-tender vegetables glazed in a glossy, savoury sauce — fresher, cheaper and faster than takeout. Serve it over rice or noodles and you have a complete meal.

Why You’ll Love This Recipe

  • Faster than ordering in — ready in about half an hour.
  • Packed with colourful, crisp-tender vegetables.
  • A flexible template for whatever is in the fridge.
  • Lighter and fresher than most takeout.

Ingredients You’ll Need

  • 1 lb boneless, skinless chicken, sliced thin — Thin, even slices cook fast and stay tender.
  • 2 tbsp neutral oil — A high smoke point oil for the hot pan.
  • 2 cups broccoli florets — Cut small so they cook through quickly.
  • 1 bell pepper, sliced — Adds colour, sweetness and crunch.
  • 1 cup carrots, thinly sliced — Slice on the diagonal so they cook evenly.
  • 1 cup snap peas — Added near the end to keep their snap.
  • 3 cloves garlic, minced — Goes in briefly so it does not burn.
  • ¼ cup soy sauce — The salty base of the sauce; use low-sodium.
  • 1 tbsp honey — Balances the soy and gives the sauce its gloss.
  • 1 tsp cornstarch — Thickens the sauce so it clings; mix with a splash of water.
  • Salt and black pepper, to taste — Season the chicken before it hits the pan.

How to Make It

  1. Stir the soy sauce, honey and cornstarch together with 2 tablespoons water to make the sauce. Set aside.
  2. Heat 1 tablespoon of oil in a large wok or skillet over high. Stir-fry the chicken until golden and just cooked, 4–5 minutes. Remove.
  3. Add the remaining oil, then the carrots and broccoli. Stir-fry for 2–3 minutes.
  4. Add the pepper and snap peas and stir-fry for another 2 minutes until crisp-tender.
  5. Add the garlic and cook for 30 seconds, then return the chicken.
  6. Pour in the sauce and toss for 1 minute until glossy and thickened. Serve immediately.

Cooking Tips

  • Prep everything before you turn on the heat — stir-frying is fast and unforgiving.
  • Keep the pan hot and the food moving so the vegetables stay crisp.
  • Do not overcook the vegetables; crisp-tender is the goal.
  • Slice the chicken thinly and against the grain for tenderness.

Serving Suggestions

Serve over steamed rice or tossed noodles, with a scatter of sesame seeds or sliced scallion on top. A drizzle of sriracha or chilli oil adds heat for those who want it.

Storage & Reheating

Refrigerate leftovers for up to 3 days and reheat quickly in a hot pan to keep the vegetables from going soft. It is best fresh; freezing tends to leave the vegetables limp, so it is not recommended.
