Roasted Vegetable Quinoa Bowl

Roasting is what turns a pile of ordinary vegetables into something crave-worthy: the high heat caramelises their edges and concentrates their sweetness. Spooned over a bowl of fluffy quinoa, they make a wholesome, satisfying meal that happens to be vegan and gluten-free.

It is also endlessly flexible — use whatever vegetables are in season or need using up. Make a big tray and a batch of quinoa, and lunches for the week sort themselves out.

Why You’ll Love This Recipe

  • Wholesome, filling and naturally vegan and gluten-free.
  • A flexible template for whatever vegetables you have.
  • Brilliant for meal prep and packed lunches.
  • Roasting makes even plain vegetables taste special.

Ingredients You’ll Need

  • 1 cup quinoa, rinsed — Rinsing removes the bitter coating; cook in broth for more flavour.
  • 2 cups water or vegetable broth — The cooking liquid for the quinoa.
  • 1 zucchini, chopped — Cut into even pieces so everything roasts at the same rate.
  • 1 red bell pepper, chopped — Sweetens and chars beautifully in the oven.
  • 2 cups broccoli florets — The edges crisp up nicely at high heat.
  • 2 carrots, chopped — Cut small so they soften in time with the rest.
  • 3 tbsp olive oil — Helps the vegetables caramelise and crisp.
  • 1 tsp dried oregano or Italian seasoning — A simple herby backbone.
  • 1 lemon, juiced — A squeeze at the end lifts the whole bowl.
  • Salt and black pepper, to taste — Season the vegetables before roasting.

How to Make It

  1. Heat the oven to 425°F (220°C). Bring the quinoa and water or broth to a boil, then cover and simmer for 15 minutes until the liquid is absorbed. Rest off the heat, then fluff with a fork.
  2. Toss the zucchini, pepper, broccoli and carrots with the olive oil, oregano, salt and pepper.
  3. Spread in a single layer on a large baking tray.
  4. Roast for 25–30 minutes, stirring once, until tender and caramelised at the edges.
  5. Divide the quinoa between bowls and top with the roasted vegetables.
  6. Finish with a squeeze of lemon and a little more seasoning to taste.

Cooking Tips

  • Spread the vegetables out in a single layer — crowding makes them steam, not roast.
  • Cut everything a similar size so it cooks evenly.
  • Cook the quinoa in broth, not water, for noticeably more flavour.
  • A drizzle of tahini or a dollop of hummus turns it into a heartier bowl.

Serving Suggestions

Lovely warm or at room temperature. Add a protein — chickpeas, feta, a soft egg or grilled chicken — and a drizzle of tahini or yoghurt dressing to make it a complete meal.

Make-Ahead & Storage

Keeps well in the fridge for up to 4 days, making it ideal for meal prep. Reheat gently or eat cold as a grain salad. Cooked quinoa and roasted vegetables both freeze for up to 2 months; thaw in the fridge before reheating.
